ROUND TABLE: The Power of Color. Food Colorants. Between Substance and Meaning.

Abstract

Color is both a property of matter and an event involving photon, molecule, and consciousness. Food colorants, having passed rigorous selection through the aggressive environment of the organism and decades of toxicological control, have become a convenient model for investigating the boundaries between substance and meaning, where one transforms into the other. Their biocompatibility is demanded far beyond the realm of food. The talk traces the path from Victorian adulterations to modern certification systems and the neurophysiology of perception; it shows how the problem of color evolved from a matter of survival into an instrument for shaping trust, taste, and the language of civilization – into a way of constructing everyday reality and the future.
