Application of optical methods for studying the composition of fruit puree mixtures for baby food

Abstract

The purpose of the work is to evaluate the biochemical composition of baby fruit puree using optical methods.
Research methods: Raman spectroscopy, confocal fluorescence microscopy.
Objects of research is store-bought puree (samples under study) and homemade puree (control) of three flavors: apple, peach-apple, banana.
As a result of the study, the main Raman lines were identified for the studied samples: ~845, 1015 cm-1 – pectin; ~830 cm-1 – xylans; ~1080-1085, ~1127-1132.5 cm-1 – glucose, sucrose, fructose; ~1155, ~1177-1187.5 cm-1 – carotenoid;, ~822-823 cm-1 – citric acid; ~625, 1252.5 cm-1 – lignin; ~350-357, 375, 425, 450-452 cm-1 – cellulose; ~480, 1000-1300 cm-1 – starch; ~920-937.5 cm-1, 1837-2062 cm-1 – terpenes; ~985 cm-1 – chlorophylls; ~598 cm-1 – phenolic acids; ~1740-1743 cm-1 – sfalse esters, aldehydes, carboxylic acids (including citric acid) and ketones.
It was found that the spectra of the studied objects had a similar character in the entire studied range, except for the region of ~1000-1300 cm-1, where Raman lines characteristic of starch were noted, which was most pronounced in store-bought puree. Perhaps, in these puree samples, starch was used as a thickener.
As a result of microscopic analysis, in the photographs of all samples of store-bought puree, crystals of citric acid were noticed, which was presumably used as a preservative. The presence of a large amount of liquid with fibrous particles was noted in the samples of store-bought puree, which is possibly characterized by the addition of fruit juice to the puree.
Thus, using optical methods, it is possible to carry out express analysis of product composition.
